Last week we had lunch at a friend's house. She made lentil soup for her boys and asked if we wanted to join them after the boys' playtime together. We had soup and bread rolls, and I don't think there was a drop left in any of the boys' bowls at the end of lunch. I asked her how to make it...she swore the secret was to puree the soup. Then no one is the wiser on all the vegetables you have in there. The funniest part though was that one of her sons asked for more *mental* soup at one point. We had a good laugh about that.
Well, when I was making the menu for the week my boys voted for mental soup. I took Laura's advice...I loaded up with veg and lentils and then blended it with the electric mixer at the end. Silas ate one big bowl of it and E had seconds. They loved it...and honestly have no idea that they just ate a big bowl (or 2) of carrots, onions, broccoli, celery, potato, and lentil. How awesome is that???
Oh yeah, I made zucchini bread for dessert. :)

that soup sounds pretty good, especially if little boys love it too! would you share the recipe? I do love me some lentils...
I really just boiled a bunch of veg -- Laura says she usually just uses what she has on hand...higher on carrots and onions. So I chopped up about 6 or 7 medium carrots, 2 onions, a large potato, 2 celery, 1/3 head of broccoli, and added about 1 1/3 cups red lentils in veg broth with herbs and a little Tony Chacheres cajun mix (our fam loves that in everything!). I boiled it about 30 mins. and then just blended with mixer. That's it.
It definitely won't win a food presentation award -- it's a orangey-brown color -- but it really tasted good.

Uhm....I guess I could use some of that "Mental" soup. As you know I am not a big veggie fan, however, disguised veggies are a different story. So why not send the ol' man a copy of the recipe.
