- Boil 1 1/2 -2 lbs. potatoes
- While potatoes are cooking, brown 1 1/2 lbs. ground beef with a chopped onion
- After draining beef, add 1-2 cups vegetables (last night I used 1 can sliced carrots, 1 can corn, and about 1/2 cup frozen peas), 1/2 c. beef broth, and 1 Tbsp. worcestershire sauce
- Warm through and then spread mixture in 9x13 pan
- Drain potatoes and mash with 1/4 -1/2 c. butter (I also add a little milk) and salt & pepper
- Spread mash over the meat and veg mix
- Top with shredded cheese
- Brown under grill (broiler) at 200C (400F)
Also, another of our new faves is this recipe for Sloppy Joes that I found in a Kraft Food and Family magazine that my mom sent to me. If you like easy meals you really should sign up for their free magazine...I think it comes quarterly.
